The meat

Flank steak (or skirt steak)
Instructions
- Whisk together all marinade ingredients in a small bowl.
- Place the steaks in a glass baking dish and pour the marinade over them, turning to coat.
- Cover with plastic wrap and refrigerate for 2 to 12 hours.
- Remove the steak from the fridge 30 minutes before cooking if possible.
- Preheat the grill or grill pan to medium-high heat.
- Cook the steak on the grill or grill pan, flipping according to desired doneness.
- Let the steak rest for 5 minutes before slicing.
- Slice the carne asada thinly against the grain.
