Fried Zucchini

Ingredients

The zucchini

  • 4 medium Zucchini (cut into 1/4-inch thick slices)

The batter

  • 2 large Eggs (whisked)
  • cup Wholesome Yum Blanched Almond Flour
  • cup Grated parmesan cheese
  • 1 tbsp Italian seasoning
  • ½ tsp Paprika
  • ½ tsp Garlic powder
  • ¾ tsp Sea salt
  • ¼ tsp Black pepper

The oil

  • 2 tbsp Avocado oil (plus more as needed)

Instructions

  1. Prepare two bowls: one with whisked eggs and another with a mixture of almond flour, grated parmesan cheese, Italian seasoning, paprika, garlic powder, sea salt, and black pepper. Use a third bowl for a small amount of the flour mixture.
  2. Dip each zucchini slice in the egg, then into the small bowl with flour mixture, and dust more flour mixture from the second bowl over the top. Set aside the breaded slice.
  3. Heat oil in a pan over medium heat. Fry zucchini slices in a single layer for about 2-3 minutes on each side until golden brown.
  4. Transfer the fried zucchini to a paper towel-lined plate to drain excess oil and repeat with remaining slices.
