Crispy Fried Zucchini with Dipping Sauces

The fried zucchini

Instructions
- Combine all dipping sauce ingredients in a bowl and stir until smooth. Refrigerate until ready to serve.
- In one bowl, beat together eggs, salt, and pepper. In another bowl, combine breadcrumbs, parmesan, Italian seasoning, garlic powder, and additional salt and pepper. Set aside.
- Add all-purpose flour to a third bowl. Set aside.
- Pour enough oil into a pan to create a ½-inch-deep layer and heat over medium.
- Dredge zucchini discs in flour, then dip in the egg mixture, and finally coat in the breadcrumb mixture. Set aside.
- When the oil is hot, add zucchini discs in batches, ensuring they do not overcrowd the pan.
- Cook zucchini discs for 2 to 3 minutes on each side until golden brown. Remove and drain on paper towels.
- Season with additional salt if desired and serve with dipping sauce and/or marinara.
