Ingredients

  • 1 large egg
  • ½ cup shredded mozzarella
  • 1 tablespoon blanched almond flour
  • ¼ teaspoon baking powder

Instructions

  1. Whisk together the egg, almond flour, and baking powder. Stir in the mozzarella cheese and set the batter aside.
  2. Preheat the waffle iron according to its settings.
  3. Spray both sides of the preheated waffle iron with cooking spray or coat with coconut oil. Pour half of the batter onto the waffle iron and spread it out. Close the waffle iron and cook for about 3 minutes until done. Repeat with the remaining batter. Allow the chaffles to cool for 2 to 3 minutes to crisp up.
