Ingredients

The base

  • 2 cups uncooked old fashioned oats
  • 1 cup packed brown sugar
  • 1 tablespoon cinnamon
  • 2 teaspoons baking powder
  • 1 teaspoon kosher salt

The fruits

  • 2 cups applesauce
  • 2 bananas sliced
  • 1 cup raisins

The nuts

  • 1 cup chopped pecans or walnuts

The binding

  • 2 large eggs
  • 2 cups low-fat milk

Optional

  • to taste maple syrup

Instructions

  1. Combine oats, brown sugar, cinnamon, baking powder, and salt in a large bowl.
  2. Stir in ½ cup of raisins.
  3. Spray the slow cooker with cooking spray and spread 1 cup of applesauce on the bottom.
  4. Layer half of the oat mixture, half of the banana slices, and half of the nuts on top.
  5. Dollop the remaining applesauce on top, followed by the rest of the oat mixture.
  6. Top with the remaining banana slices, raisins, and nuts.
  7. Whisk together eggs and milk, then pour evenly over the mixture.
  8. Cover and cook on low for 4-6 hours or high for 2 hours.
