Smoked Meatloaf

Ingredients

The meatloaf

  • 2 lbs ground beef 80/20
  • 1 cup sweet onion, finely chopped
  • 2 large eggs
  • ¾ cup panko bread crumbs
  • cup whole milk
  • 1 tablespoon Worcestershire sauce
  • 1 tablespoon garlic, finely chopped
  • 1 tablespoon Italian parsley, finely chopped
  • 1 teaspoon kosher salt
  • ½ teaspoon black pepper
  • 1 teaspoon paprika
  • 1 teaspoon dry oregano

The glaze

  • ¼ cup ketchup
  • cup bbq sauce
  • ½ teaspoon apple cider vinegar
  • teaspoon table salt
  • teaspoon black pepper

Instructions

  1. Combine ground beef with panko, milk, eggs, parsley, onion, salt, pepper, garlic, Worcestershire sauce, paprika, and oregano in a large bowl.
  2. Mix gently to combine without overhandling, then wrap and refrigerate for 30-60 minutes.
  3. Prepare the glaze by mixing ketchup, BBQ sauce, vinegar, salt, and pepper in a small bowl and set aside.
  4. Preheat the smoker to 250°F and allow the meatloaf to come to room temperature.
  5. Form the meat mixture into a loaf on parchment paper and place it on a wire rack over a foil pan.
  6. Insert a probe into the center of the meatloaf and place it in the smoker.
  7. After one hour, coat the meatloaf with the glaze and continue cooking until the internal temperature reaches 155°F.
  8. Remove from the smoker, brush with glaze again, and serve.
