Unbelievably Easy Smoked Meatloaf

Ingredients

The meatloaf

  • 3 cloves garlic, minced
  • ½ onion fine dice
  • 2 sticks celery, fine dice
  • 1 lb ground beef
  • 1 lb ground pork
  • 2 eggs
  • cup coconut aminos
  • 2 tsp ground sage
  • 2 tsp parsley
  • 1 tsp pepper

The glaze (optional)

  • ¼ cup ketchup
  • 1 tbsp coconut aminos
  • 1 tsp mustard

Instructions

  1. Preheat the smoker to 225°F.
  2. Chop garlic, onion, and celery.
  3. In a bowl, combine ground beef, pork, eggs, coconut aminos, and chopped vegetables.
  4. Mix well with hands and form into a loaf shape on a baking sheet.
  5. Transfer the meatloaf to the smoker carefully.
  6. Smoke the meatloaf at 225°F for 1 hour.
  7. Prepare the glaze by mixing the glaze ingredients in a bowl and refrigerate.
  8. Increase smoker temperature to 350°F and cook until the meatloaf reaches 130°F.
  9. Brush the glaze over the meatloaf and continue cooking until it reaches 155°F.
  10. Remove from the smoker and let rest for 15 minutes before slicing.
