Unbelievably Easy Smoked Meatloaf

The glaze (optional)

Instructions
- Preheat the smoker to 225°F.
- Chop garlic, onion, and celery.
- In a bowl, combine ground beef, pork, eggs, coconut aminos, and chopped vegetables.
- Mix well with hands and form into a loaf shape on a baking sheet.
- Transfer the meatloaf to the smoker carefully.
- Smoke the meatloaf at 225°F for 1 hour.
- Prepare the glaze by mixing the glaze ingredients in a bowl and refrigerate.
- Increase smoker temperature to 350°F and cook until the meatloaf reaches 130°F.
- Brush the glaze over the meatloaf and continue cooking until it reaches 155°F.
- Remove from the smoker and let rest for 15 minutes before slicing.
