Stupid Easy Meatloaf

Ingredients

  • 2 lb grassfed ground beef
  • 1 cup grated cauliflower
  • 1 6oz can tomato paste
  • 2 tbsp Dijon mustard
  • 2 large eggs
  • 2 tbsp coconut aminos
  • 1 tbsp fish sauce
  • 2 tbsp dried onion flakes
  • 2 tbsp dried oregano
  • 1 tbsp dried chives
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp Himalayan salt
  • 1 tsp freshly cracked black pepper
  • 1 tsp ground coriander
  • 1 tsp celery seeds
  • to taste Frank's Red Hot Sauce

Instructions

  1. Preheat the oven to 375°F.
  2. Combine all ingredients except for Frank's Red Hot Sauce in a large mixing bowl and knead until well mixed.
  3. Transfer the mixture to a loaf pan and shape it nicely.
  4. Cover the top with Frank's Red Hot Sauce as desired.
  5. Place the meatloaf in the oven, using a broiler pan or foil beneath to catch drippings.
  6. Bake for 60 minutes, then drain excess liquid and broil for 5 minutes until the top is browned.
  7. Let the meatloaf rest for at least 20 minutes before slicing.
  8. Serve with additional Frank's Red Hot Sauce if desired.
