Instructions
- Preheat the oven to 375°F.
- Mix all the BBQ sauce ingredients in a small bowl until combined.
- In a large bowl, combine all meatloaf ingredients, including half of the BBQ sauce, and knead well.
- Transfer the meat mixture to a loaf pan, shaping the top nicely.
- Spread the remaining BBQ sauce over the top of the meatloaf.
- Place a broiler pan or foil underneath the loaf pan to catch drippings.
- Bake for 15 minutes at 375°F, then lower the temperature to 350°F and bake for an additional 30 minutes.
- Cover loosely with foil and bake for another 30 minutes.
- Remove from the oven and let rest for at least 20 minutes before serving.
- Garnish with fresh parsley and olive oil if desired.
