Classic Meatloaf

Ingredients

The Meatloaf

  • 2 lb grassfed ground beef
  • 2 cups grated cauliflower
  • 1 medium onion, finely chopped
  • 3 cloves garlic, minced
  • ¼ cup fresh parsley, chopped
  • 3 tbsp Dijon mustard
  • 2 large eggs
  • 2 tbsp dried oregano
  • 1 tbsp dried thyme
  • 1 tbsp onion powder
  • 1 tsp Himalayan salt
  • 1 tsp freshly ground black pepper
  • 1 tsp ground coriander
  • about half of the BBQ sauce from below

The BBQ Sauce

  • 1 small can tomato paste
  • 2 tbsp apple cider vinegar
  • 2 tbsp Dijon mustard
  • 1 tbsp blackstrap molasses
  • 1 clove garlic, minced
  • 1 tsp onion powder
  • 1 tsp Himalayan salt
  • 1 tsp freshly ground black pepper
  • 1 tsp smoked paprika
  • ½ tsp chipotle powder
  • ½ tsp chili pepper flakes
  • ¼ tsp ground white pepper
  • ¼ tsp ground ginger
  • ¼ tsp ground Ceylon cinnamon
  • tsp ground clove

Instructions

  1. Preheat the oven to 375°F.
  2. Mix all the BBQ sauce ingredients in a small bowl until combined.
  3. In a large bowl, combine all meatloaf ingredients, including half of the BBQ sauce, and knead well.
  4. Transfer the meat mixture to a loaf pan, shaping the top nicely.
  5. Spread the remaining BBQ sauce over the top of the meatloaf.
  6. Place a broiler pan or foil underneath the loaf pan to catch drippings.
  7. Bake for 15 minutes at 375°F, then lower the temperature to 350°F and bake for an additional 30 minutes.
  8. Cover loosely with foil and bake for another 30 minutes.
  9. Remove from the oven and let rest for at least 20 minutes before serving.
  10. Garnish with fresh parsley and olive oil if desired.
