Stupid Easy No-Pan Meatloaf

Ingredients

  • 2.65 lb lean ground beef
  • ¾ cup rolled oats
  • ½ cup sour cream
  • ¼ cup fresh parsley, chopped
  • 2 large eggs
  • 2 tbsp tomato paste
  • 2 tbsp dried mustard
  • 2 tbsp Worcestershire sauce
  • 1 tbsp fish sauce
  • 2 tbsp dried onion flakes
  • 2 tbsp dried oregano
  • 1 tbsp dried chives
  • 1 tbsp onion powder
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 1 tsp coarse ground black pepper
  • 1 tsp ground coriander
  • 1 tsp red pepper flakes (optional)
  • ½ tsp baking soda

Instructions

  1. 1. Preheat the oven to 375°F.
  2. 2. In a large mixing bowl, combine all the ingredients and knead with your hands until well mixed, being careful not to overmix.
  3. 3. Transfer the mixture to a large baking dish or rimmed baking sheet and shape it into a loaf.
  4. 4. Bake in the oven for 75 to 90 minutes, basting once or twice, until the internal temperature reaches 160°F.
  5. 5. If the meatloaf starts to darken too much, cover it loosely with aluminum foil.
  6. 6. Once done, let it rest for 15 to 20 minutes before slicing.
  7. 7. Serve with chopped parsley and a splash of hot sauce if desired.
