Instructions
- Boil water in a medium pot and add the pecans, simmering for 2 minutes before draining and rinsing with cold water.
- Combine sugar and 1 cup of water in a pot, bring to a simmer for 2 minutes, then add the pecans and simmer for 5 minutes before draining.
- Preheat a deep fryer to 375ºF or prepare a heavy-bottomed pot with oil, ensuring it's deep enough for frying.
- Fry the pecans in small batches for 3 to 5 minutes until crunchy, monitoring the oil temperature closely.
- Remove the pecans with a slotted spoon and let them drain on a cooling rack or parchment paper until completely cool.
