Ingredients

The nuts

  • 1 lb. raw pecans

The syrup

  • 1 ⅓ cups sugar
  • 1 cup water

Instructions

  1. Boil water in a medium pot and add the pecans, simmering for 2 minutes before draining and rinsing with cold water.
  2. Combine sugar and 1 cup of water in a pot, bring to a simmer for 2 minutes, then add the pecans and simmer for 5 minutes before draining.
  3. Preheat a deep fryer to 375ºF or prepare a heavy-bottomed pot with oil, ensuring it's deep enough for frying.
  4. Fry the pecans in small batches for 3 to 5 minutes until crunchy, monitoring the oil temperature closely.
  5. Remove the pecans with a slotted spoon and let them drain on a cooling rack or parchment paper until completely cool.
