Instructions
- Preheat the oven to 400°F and prepare a 9-inch square baking dish by buttering and flouring it.
- Soak the chopped apples in a bowl of water with lemon juice and set aside.
- In a large bowl, combine flour, baking powder, cinnamon, sugar, and salt.
- In a separate bowl, whisk together eggs, buttermilk, and melted butter.
- Pour the wet mixture into the dry ingredients and stir until just combined, avoiding overmixing.
- Drain the apples, fold them into the batter, and spoon the mixture into the prepared pan.
- Sprinkle most of the large grain sugar on top and bake for 20-25 minutes until just set and lightly golden.
