Apple Buttermilk Cake

Ingredients

  • 1 cup all-purpose flour
  • ½ teaspoon baking powder
  • ½ teaspoon baking soda
  • ¼ teaspoon salt
  • 1 teaspoon cinnamon, divided
  • a pinch fresh nutmeg
  • ½ stick unsalted butter, softened
  • cup granulated sugar
  • ½ teaspoon pure vanilla extract
  • 1 large egg
  • ½ cup shaken buttermilk
  • 1 large Granny Smith apple, peeled and sliced
  • 2 tablespoons brown sugar
  • to sprinkle Turbinado sugar

Instructions

  1. Preheat the oven to 400°F and prepare a 9-inch round cake pan.
  2. Whisk together the flour, baking powder, baking soda, salt, ½ teaspoon of cinnamon, and nutmeg.
  3. Beat the softened butter and sugar until fluffy, then mix in the vanilla and egg.
  4. Gradually add the flour mixture and buttermilk, alternating between them until just combined.
  5. Combine the apple slices with brown sugar and the remaining cinnamon in a small bowl.
  6. Spread the batter in the prepared cake pan and top with the apple slices and turbinado sugar.
  7. Bake for about 25 minutes until golden and a toothpick comes out clean.
  8. Cool in the pan for 10 minutes, then transfer to a rack to cool for another 10-15 minutes before serving.
