Paleo Sausage Egg McMuffin

Instructions
- Grease two stainless steel 3½-inch biscuit cutters with melted ghee or avocado oil spray.
- Fill one cutter with sausage meat and press down to shape a patty.
- Heat a skillet over medium heat and add ghee or avocado oil, then add the sausage patty.
- Fry the sausage for 2 to 3 minutes on each side until fully cooked, then transfer to a plate.
- Crack an egg into each of two small bowls and pierce the yolks with a fork.
- Heat the skillet again and add more ghee, then place the greased biscuit cutters in the pan.
- Pour an egg into each cutter and season with salt and pepper.
- Add ¼ cup of water to the skillet outside of the egg molds and cover with a lid.
- Cook the eggs covered for about 3 minutes until cooked through, then transfer to a paper towel-lined plate.
- Assemble the sandwich by placing the sausage patty between the two egg rounds and adding guacamole if desired.
