Paleo Sausage Egg McMuffin

Ingredients

  • ¼ pound bulk Italian sausage
  • 2 large eggs
  • 1 tablespoon ghee or avocado oil
  • ¼ cup water
  • to taste Diamond Crystal kosher salt
  • to taste freshly ground black pepper
  • 2 tablespoons guacamole (optional)

Instructions

  1. Grease two stainless steel 3½-inch biscuit cutters with melted ghee or avocado oil spray.
  2. Fill one cutter with sausage meat and press down to shape a patty.
  3. Heat a skillet over medium heat and add ghee or avocado oil, then add the sausage patty.
  4. Fry the sausage for 2 to 3 minutes on each side until fully cooked, then transfer to a plate.
  5. Crack an egg into each of two small bowls and pierce the yolks with a fork.
  6. Heat the skillet again and add more ghee, then place the greased biscuit cutters in the pan.
  7. Pour an egg into each cutter and season with salt and pepper.
  8. Add ¼ cup of water to the skillet outside of the egg molds and cover with a lid.
  9. Cook the eggs covered for about 3 minutes until cooked through, then transfer to a paper towel-lined plate.
  10. Assemble the sandwich by placing the sausage patty between the two egg rounds and adding guacamole if desired.
