Instructions
- Preheat the oven to 400°F.
- Slice the cabbage in half from tip to core and remove the core.
- Thinly slice each half into about ¼-inch pieces.
- Transfer the cabbage to a sheet pan, drizzle with oil and miso, and sprinkle with salt.
- Toss the cabbage to ensure it is well coated.
- Roast for 12 minutes, then stir the cabbage.
- Return to the oven for an additional 5 to 8 minutes until golden around the edges.
- Drizzle with rice vinegar before serving.
