Ingredients

The cabbage

  • 2 pounds red cabbage

The seasoning

  • 1 tablespoon canola oil
  • 2 teaspoons yellow miso
  • ½ teaspoon kosher salt
  • to taste rice vinegar

Instructions

  1. Preheat the oven to 400°F.
  2. Slice the cabbage in half from tip to core and remove the core.
  3. Thinly slice each half into about ¼-inch pieces.
  4. Transfer the cabbage to a sheet pan, drizzle with oil and miso, and sprinkle with salt.
  5. Toss the cabbage to ensure it is well coated.
  6. Roast for 12 minutes, then stir the cabbage.
  7. Return to the oven for an additional 5 to 8 minutes until golden around the edges.
  8. Drizzle with rice vinegar before serving.
