Instructions
- 1. Spray a 9 x 13-inch baking pan with cooking spray and place torn or cubed French bread in the pan.
- 2. In a large bowl, mix eggs and milk together.
- 3. Combine granulated sugar and orange zest in a small bowl, rub together until fragrant, then add to the egg mixture along with vanilla extract and cinnamon.
- 4. Pour the egg mixture evenly over the bread, then mix strawberries and rhubarb in a bowl and pour over the top, pressing them down into the bread.
- 5. Cover the pan with plastic wrap and refrigerate for several hours or overnight.
- 6. For the streusel topping, mix flour, brown sugar, cinnamon, and salt in a bowl, then cut in the butter until it resembles sand with some pea-sized chunks.
- 7. Refrigerate the streusel mixture until ready to use.
- 8. Preheat the oven to 350°F (175°C). Remove the French toast from the refrigerator, sprinkle the streusel on top, and bake for 45-55 minutes until set and golden brown.
- 9. Serve warm with maple syrup.
