Ingredients

The filling

  • 1 small apple (cored, peeled and chopped)
  • 1 Tbsp maple syrup
  • 1 Tbsp olive oil
  • ½ tsp ground cinnamon
  • ¼ tsp sea salt

The base

  • 13-14 whole dates (pitted)
  • 1 cup raw or roasted almonds
  • 1 cup raw or roasted walnuts

Instructions

  1. Preheat the oven to 350°F (176°C).
  2. Toss the chopped apple with olive oil, maple syrup, cinnamon, and sea salt on a baking sheet and bake for 15-20 minutes until soft.
  3. In a food processor, grind the nuts into a meal and then add the dates to form a loose dough.
  4. Chop the baked apples into smaller pieces and mix them into the nut and date mixture until a moist dough forms.
  5. Transfer the mixture to a parchment-lined loaf pan and press it down firmly.
  6. Freeze the mixture to set, then chop into bars.
  7. Store the bars in a bag or container with parchment between them to prevent sticking.
