Instructions
- 1. Activate the yeast by warming a bowl, adding yeast, maple syrup, and warm water, then let it sit for 5 minutes until foamy.
- 2. In a mixing bowl, combine gluten-free flour, egg, olive oil, salt, and the yeast mixture, then mix until a uniform dough forms and let it rest for 10 minutes.
- 3. Divide the dough into 4 pieces, roll each into a rope, and cut into 1 ½-inch pieces to form pretzel bites.
- 4. Boil water with baking soda, then drop pretzel bites in batches until they float, then transfer to a baking sheet.
- 5. Sprinkle with flaky salt and bake at 400ºF for 12 to 15 minutes until golden brown.
