Ingredients

The base

  • 16 ounces whole milk ricotta
  • 1/4 cup shelled, salted, roasted pistachios
  • 2 tablespoons extra-virgin olive oil
  • 1/2 teaspoon kosher salt
  • 1 lemon zest

The toppings

  • 2 tablespoons honey
  • 2 sprigs fresh thyme (optional)
  • bread for serving grilled, charred, or toasted

Instructions

  1. Pulse the pistachios in a food processor until finely chopped and set aside.
  2. In the same food processor, add the ricotta, 1 tablespoon of olive oil, 1/2 teaspoon of kosher salt, and the lemon zest. Process until thick and creamy.
  3. Transfer the whipped ricotta to a serving platter and spread it out to create peaks and valleys.
  4. Drizzle the ricotta with the remaining olive oil and honey, adjusting the sweetness to taste.
  5. Sprinkle the chopped pistachios on top and serve with grilled or toasted bread.
