Insanely Delicious Whipped Ricotta

Instructions
- Pulse the pistachios in a food processor until finely chopped and set aside.
- In the same food processor, add the ricotta, 1 tablespoon of olive oil, 1/2 teaspoon of kosher salt, and the lemon zest. Process until thick and creamy.
- Transfer the whipped ricotta to a serving platter and spread it out to create peaks and valleys.
- Drizzle the ricotta with the remaining olive oil and honey, adjusting the sweetness to taste.
- Sprinkle the chopped pistachios on top and serve with grilled or toasted bread.
