Instructions
- 1. Preheat the oven to 350°F (177°C) and prepare a 9-inch pie dish or round cake pan with nonstick spray.
- 2. In a large bowl, beat the softened butter until smooth, then mix in the brown sugar until creamy.
- 3. Add the egg, egg yolk, and vanilla extract, mixing until combined.
- 4. In a separate bowl, combine the flour, cornstarch, baking soda, and salt, then gradually mix this into the wet ingredients until combined.
- 5. Fold in 1¼ cups of chocolate chips into the dough.
- 6. Press the cookie dough evenly into the prepared pan and bake for 20-25 minutes until lightly golden brown.
- 7. Allow the cookie cake to cool completely before transferring it to a serving dish.
- 8. Optionally, decorate with chocolate buttercream and the remaining chocolate chips.
