Ingredients

The cookie layers

  • 3 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • 1 teaspoon salt
  • 1 cup unsalted butter, softened
  • 1 cup packed light or dark brown sugar
  • ½ cup granulated sugar
  • 2 large eggs, at room temperature
  • teaspoons pure vanilla extract
  • 2 cups semi-sweet chocolate chips

The frosting

  • 1 cup unsalted butter, softened
  • ½ cup creamy peanut butter
  • cups confectioners’ sugar
  • ½ cup unsweetened cocoa powder
  • 1 teaspoon pure vanilla extract
  • 1–2 tablespoons milk
  • to taste salt

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare the cake pans.
  2. Whisk together the dry ingredients for the cookie layers in a bowl.
  3. In another bowl, cream the butter and sugars together, then add the eggs and vanilla.
  4. Combine the wet and dry ingredients, then mix in the chocolate chips.
  5. Divide the dough into the prepared pans and bake for 20-22 minutes.
  6. Let the layers cool in the pans for 10 minutes, then transfer to a wire rack to cool completely.
  7. For the frosting, beat the butter and peanut butter together, then mix in the sugar, cocoa, vanilla, and milk until smooth.
  8. Assemble the cake by layering the cookie layers with frosting in between, and frost the top and sides as desired.
  9. Store leftovers in the refrigerator.
