Instructions
- Preheat the oven to 350°F (177°C) and prepare a 9-inch pie dish or round cake pan with nonstick spray.
- Cream the softened butter and brown sugar together until creamy, then mix in the egg, egg yolk, and vanilla extract.
- In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt, then combine with the wet ingredients.
- Fold in the chocolate chips until evenly distributed.
- Press the cookie dough into the prepared pan evenly.
- Bake for 22–26 minutes until lightly golden brown, checking for doneness with a toothpick.
- Allow the cookie cake to cool completely before transferring it to a serving dish.
- Top with chocolate buttercream if desired and serve.
