Ingredients

The cookie cake

  • ¾ cup unsalted butter, softened to room temperature
  • 1 cup packed light or dark brown sugar

  • 1 large egg yolk
  • 2 teaspoons pure vanilla extract
  • 2 cups all-purpose flour
  • 2 teaspoons cornstarch
  • 1 teaspoon baking soda
  • ½ teaspoon salt

Instructions

  1. Preheat the oven to 350°F (177°C) and prepare a 9-inch pie dish or round cake pan with nonstick spray.
  2. Cream the softened butter and brown sugar together until creamy, then mix in the egg, egg yolk, and vanilla extract.
  3. In a separate bowl, whisk together the flour, cornstarch, baking soda, and salt, then combine with the wet ingredients.
  4. Fold in the chocolate chips until evenly distributed.
  5. Press the cookie dough into the prepared pan evenly.
  6. Bake for 22–26 minutes until lightly golden brown, checking for doneness with a toothpick.
  7. Allow the cookie cake to cool completely before transferring it to a serving dish.
  8. Top with chocolate buttercream if desired and serve.
