Honey Lavender Syrup

Ingredients

  • ½ cup honey
  • ½ cup water
  • 2 Tbsp fresh lavender leaves or dried lavender buds

Instructions

  1. Heat water in a small saucepan until hot, but not boiling.
  2. Add honey and lavender leaves (or buds), and stir until honey is completely dissolved.
  3. Remove from heat, and let steep for one hour, stirring every fifteen minutes.
  4. Strain the syrup through a fine mesh sieve into an airtight container, pressing down on the lavender to extract more flavor.
  5. Discard the lavender and store the syrup in the refrigerator for up to two weeks.
