Ingredients

Dough

  • 1 lb fresh pizza dough
  • cup pastry flour

Enchilada Bean Sauce

  • 15 oz refried black beans
  • 8 oz enchilada sauce
  • 2 tsp minced garlic
  • 2 tbsp olive oil
  • ¼ cup chicken stock
  • 2 tsp all-purpose flour
  • 1 tsp onion powder
  • 1 tsp garlic powder
  • 3 tsp chili powder
  • tsp paprika
  • ½ tsp ground cumin
  • 2 tsp black pepper
  • ½ tsp sea salt

Toppings

  • 1 lb ground beef
  • ¼ tsp cayenne pepper
  • ½ tsp oregano
  • 12 oz shredded Mexican blend cheese
  • 4 oz shredded mild cheddar cheese
  • 4 oz shredded Monterey jack cheese
  • 1 cup fresh pico de gallo
  • 1 cup pickled or fresh jalapeno slices
  • 1 cup black olives
  • 1 cup fresh cilantro

Instructions

  1. Preheat the oven to 400°F.
  2. Spread pastry flour on the counter and shape the pizza dough into a rectangular shape.
  3. In a pot, combine refried black beans, enchilada sauce, minced garlic, olive oil, chicken stock, all-purpose flour, onion powder, garlic powder, chili powder, paprika, ground cumin, black pepper, and sea salt. Cook for 5 minutes and set aside.
  4. Cook ground beef in a skillet with chili powder, onion powder, garlic powder, paprika, cayenne pepper, oregano, black pepper, and sea salt until browned, then drain excess grease.
  5. Layer the pizza dough with the enchilada bean sauce, cooked beef, Mexican blend cheese, pico de gallo, jalapeno slices, Monterey jack cheese, mild cheddar cheese, black olives, and cilantro.
  6. Bake the pizza for 18 to 20 minutes, allow to cool, then serve.
