Better Than Taco Bell Mexican Pizzas

Ingredients

The filling

  • 1 tablespoon olive oil
  • ½ onion diced finely
  • 1 clove garlic, mashed or minced finely
  • 1 pound ground beef
  • 3 tablespoons taco seasoning

The base

  • 6 flour tortillas about 5-6 inch size
  • 1 can refried pinto beans
  • 1 ½ cups shredded Mexican blend cheese
  • 1 15-ounce bottle red enchilada sauce
  • 2 small tomatoes, diced into cubes

Garnishes

  • to taste chopped cilantro
  • to taste sliced black olives
  • to taste shredded lettuce
  • to taste sour cream

Instructions

  1. Preheat the oven to 425°F.
  2. In a pan over medium heat, heat the olive oil and sauté the onion and garlic for about 3 minutes.
  3. Add the ground beef and taco seasoning, cooking until the beef is well done and broken into small pieces.
  4. Drain excess oil from the pan and set the beef mixture aside.
  5. Line tortillas on baking sheets, spray lightly with cooking spray, and bake for about 2 minutes on each side.
  6. Warm the refried beans in a saucepan or microwave.
  7. On three tortillas, spread a thin layer of beans and add some of the beef mixture.
  8. Top with the remaining tortillas, spread enchilada sauce on top, and sprinkle with cheese.
  9. Bake for 3-4 minutes until the cheese has melted.
  10. Remove from the oven and add diced tomatoes and garnishes, then cut each pizza into six slices.
