Better Than Taco Bell Mexican Pizzas

red enchilada sauce

tomatoes, diced into cubes

Instructions
- Preheat the oven to 425°F.
- In a pan over medium heat, heat the olive oil and sauté the onion and garlic for about 3 minutes.
- Add the ground beef and taco seasoning, cooking until the beef is well done and broken into small pieces.
- Drain excess oil from the pan and set the beef mixture aside.
- Line tortillas on baking sheets, spray lightly with cooking spray, and bake for about 2 minutes on each side.
- Warm the refried beans in a saucepan or microwave.
- On three tortillas, spread a thin layer of beans and add some of the beef mixture.
- Top with the remaining tortillas, spread enchilada sauce on top, and sprinkle with cheese.
- Bake for 3-4 minutes until the cheese has melted.
- Remove from the oven and add diced tomatoes and garnishes, then cut each pizza into six slices.
