Thick & Chunky Tomato Sauce

Ingredients

The sauce

  • 1 tablespoon extra-virgin olive oil
  • ½ large sweet onion or 1 small yellow onion, diced
  • 2 large garlic cloves, minced
  • 3 large tomatoes, seeded and diced
  • ¼ cup fresh basil leaves, minced
  • ¼ cup oil-packed sun-dried tomatoes
  • ½ teaspoon dried oregano
  • ¼-½ teaspoon fine grain sea salt
  • to taste freshly ground black pepper
  • to taste red pepper flakes (optional)

The noodles

  • 1 medium zucchini, spiralized or julienned
  • 1 serving cooked pasta
  • ½ cooked spaghetti squash

Instructions

  1. Heat olive oil in a medium pot and sauté diced onion and minced garlic until translucent.
  2. Add diced tomatoes and bring to a boil, then reduce heat and simmer uncovered until thickened.
  3. Blend sun-dried tomatoes with a ladle of the sauce until smooth, then stir back into the pot.
  4. Add minced basil, oregano, salt, pepper, and optional red pepper flakes, cooking until desired thickness is reached.
  5. Serve the sauce over your choice of noodles.
