Ingredients

  • 2 tablespoons unsalted butter or coconut oil
  • 2 cups old-fashioned rolled oats
  • 1 ½ cups water
  • ½ cup milk of choice or additional water
  • generous pinch fine salt
  • pinch ground cinnamon (optional)

Instructions

  1. Melt the butter or coconut oil in a saucepan over medium heat.
  2. Add the oats and stir to coat, cooking until they smell toasty and start to turn lightly golden.
  3. Pour in the water and milk, add salt and cinnamon, and stir to combine.
  4. Cook until the mixture bubbles rapidly, then cover the pot and turn off the heat.
  5. Let the pot rest for 7 minutes.
  6. Check the oats; they should be slightly dry and separated. If too wet, cover and let rest for 1-2 more minutes.
  7. Serve as desired.
