Instructions
- Preheat the oven to 400°F and coat a 9-inch pie plate with nonstick spray.
- In a small bowl, whisk together melted butter and garlic powder.
- Flatten each biscuit half into a disk, then top with a piece of pepperoni and a ½-ounce piece of mozzarella cheese.
- Fold the sides of the biscuit up over the filling to shape it into a ball and place it in the prepared pan.
- Repeat the process with the remaining biscuit halves, pepperoni, and mozzarella cheese.
- Arrange the remaining pepperoni between the biscuits in the baking dish and brush with garlic butter.
- Bake for 15 to 20 minutes until the biscuits start to brown.
- Remove from the oven and top with shredded mozzarella cheese, then return to the oven until the cheese melts, about 1 to 2 minutes.
- Garnish with parsley if desired and serve with marinara sauce or ranch dressing.
