Crispy Chicken Caesar Sandwiches

Ingredients

The Chicken

  • 1 lb thin uncooked boneless skinless chicken breast cutlets
  • tablespoons all-purpose flour
  • ½ teaspoon salt
  • ¼ teaspoon black pepper
  • ¼ teaspoon garlic powder
  • ¼ teaspoon paprika
  • 2 large egg whites
  • oz finely shredded Parmesan cheese
  • ½ cup plain panko breadcrumbs
  • ½ teaspoon dried parsley flakes

The Salad Topping

  • 2 cups chopped romaine lettuce
  • 2 tablespoons light Caesar dressing

The Buns

  • 4 pieces sandwich rolls or hamburger buns
  • ½ teaspoon garlic salt
  • 4 pieces lemon wedges

Instructions

  1. Mix flour, salt, pepper, garlic powder, and paprika in a small dish and coat the chicken cutlets with the mixture.
  2. Beat the egg whites in a shallow dish and combine the shredded Parmesan, panko breadcrumbs, and parsley in another dish.
  3. Coat each chicken cutlet in the egg whites, then press into the breadcrumb mixture.
  4. For air frying, cook at 400°F for 6 minutes, flip, and cook for another 6 minutes. For oven, preheat to 425°F and bake for 8 minutes on each side.
  5. While the chicken cooks, toss the romaine with the remaining Parmesan and Caesar dressing.
  6. Toast the inside of the sandwich rolls on a heated pan with cooking spray and garlic salt until golden.
  7. Assemble the sandwiches with a chicken cutlet, a scoop of salad topping, a squeeze of lemon, and the top bun.
