Ingredients

  • 1 15-oz can Diced tomatoes (with juice from the can)
  • 1 lb Roma tomatoes (cut into large chunks; ~4-6 medium)
  • ½ large White onion (~1 cup)
  • ½ cup Fresh cilantro
  • 1 medium Jalapeño (seeds removed, coarsely chopped)
  • 4 cloves Garlic (coarsely chopped)
  • 2 tbsp Lime juice
  • ½ tsp Sea salt (to taste)
  • ½ tsp Chili powder (optional)
  • ½ tsp Ground cumin (optional)

Instructions

  1. Chop the fresh tomatoes, onion, garlic, and jalapeño into chunks and place them in a food processor.
  2. Add the canned tomatoes, cilantro, lime juice, salt, and spices to the food processor.
  3. Pulse intermittently until the salsa reaches your desired consistency, checking for salt before finishing.
