Cheddar Biscuits with Sage

Instructions
- Preheat the oven to 400°F and line two baking sheets with parchment paper.
- Combine almond milk and lemon juice in a small bowl and set aside.
- Prepare the grated cheese and finely chopped sage.
- In a large bowl, whisk together flour, salt, sugar, baking powder, and chopped sage.
- Cut the cold butter into small cubes and add to the dry ingredients. Incorporate until it resembles small peas.
- Add the almond milk and lemon juice mixture along with the cheese. Fold until just combined.
- Transfer the dough to a floured surface and roll it out to about 1-1½ inches thick.
- Use a 2-inch round cookie cutter to cut out biscuits and place them on the baking sheets.
- Brush almond milk on top of each biscuit for moisture and color.
- Bake for 10-12 minutes and let cool before serving.
