Ingredients

  • 2 cups whole-wheat pastry flour
  • 2 teaspoons baking powder
  • ¾ teaspoon baking soda
  • ½ teaspoon black pepper
  • ½ teaspoon salt
  • 8 tablespoons butter (cut into ½ tablespoon chunks)
  • 2 green onions thinly sliced (about ½ cup total)
  • ¾ cup shredded sharp cheddar cheese
  • 1 cup buttermilk

Instructions

  1. Preheat the oven to 425°F and line a baking sheet with parchment paper.
  2. In a large bowl, whisk together the flour, baking powder, baking soda, pepper, and salt.
  3. Cut in the butter until the mixture is crumbly.
  4. Stir in the scallions and cheddar cheese, then add the buttermilk until the dough comes together.
  5. Transfer the dough to a floured surface and knead it a few times.
  6. Pat the dough into an 8" x 6" rectangle, fold it like a business letter, then rotate and repeat the folding.
  7. Cut the dough into 8 equal pieces and place them on the baking sheet.
  8. Bake for 10 to 15 minutes until golden brown.
