Ingredients

Dry Ingredients

  • 1 cup almond flour
  • 2 tsp baking powder
  • 1 tsp garlic powder
  • 1 tbsp Italian seasoning
  • 1 tsp smoked paprika
  • ½ tsp salt

Wet Ingredients

  • ¾ cup grated cheddar
  • 2 whole eggs
  • 3 egg whites
  • ¾ cup sour cream or plain Greek yogurt
  • ¼ cup melted butter
  • 2 tbsp shredded cheddar (for sprinkling)

Instructions

  1. Preheat the oven to 350°F.
  2. In a large bowl, combine the dry ingredients: almond flour, baking powder, garlic powder, Italian seasoning, smoked paprika, and salt.
  3. In another bowl, mix the wet ingredients: cheddar, eggs, egg whites, sour cream, and melted butter.
  4. Combine the wet and dry ingredients and mix until lump-free.
  5. Drop the batter by rounded tablespoonfuls onto a parchment-lined baking sheet or into a greased muffin tin.
  6. Sprinkle the tops with the remaining shredded cheddar.
  7. Bake for 20-23 minutes until golden and a toothpick comes out clean.
