Ingredients

  • 2 cups finely ground blanched almond flour
  • ¼ cup grass-fed collagen
  • 2 tsp aluminum-free double-acting baking powder
  • ½ tsp fine sea salt
  • 2 Tbsp grass-fed butter
  • ¼ cup reduced fat buttermilk
  • 4 large egg whites

Instructions

  1. Preheat the oven to 375ºF (190ºC) and line a baking sheet with parchment paper.
  2. Combine the dry ingredients in a medium-sized mixing bowl.
  3. Grate the cold butter into the bowl and toss to combine.
  4. Add the buttermilk and egg whites, and stir well to combine.
  5. Form the biscuits by either dropping the batter onto the parchment paper or using a greased measuring cup for a more uniform shape.
  6. Bake for 20-22 minutes until golden brown.
  7. Allow to cool on the pan for about 5 minutes, then transfer to a cooling rack.
  8. Let cool for at least 10-15 minutes before serving.
