Ingredients

  • 2 cups Masa Harina
  • ¾ cup cooked quinoa
  • 1¾ - 2¼ cups warm water
  • ½ teaspoon Pure Himalayan Salt
  • zest of 1 lime (optional)

Instructions

  1. Combine masa harina, quinoa, salt, warm water, and lime zest in a bowl.
  2. Mix well and knead until a Play-Dough like texture is achieved, adding water as needed.
  3. Shape the dough into golf ball sized balls and cover with a damp towel.
  4. Heat a griddle or skillet to medium.
  5. Flatten tortillas using a tortilla press or rolling pin.
  6. Cook for 1 to 2 minutes per side until the surface appears dry.
  7. Place cooked tortillas on a plate and cover with a clean damp dish cloth to keep warm.
  8. Store leftovers in a zip lock bag in the refrigerator and reheat before serving.
