Instructions
- Combine masa harina, quinoa, salt, warm water, and lime zest in a bowl.
- Mix well and knead until a Play-Dough like texture is achieved, adding water as needed.
- Shape the dough into golf ball sized balls and cover with a damp towel.
- Heat a griddle or skillet to medium.
- Flatten tortillas using a tortilla press or rolling pin.
- Cook for 1 to 2 minutes per side until the surface appears dry.
- Place cooked tortillas on a plate and cover with a clean damp dish cloth to keep warm.
- Store leftovers in a zip lock bag in the refrigerator and reheat before serving.
