Instructions
- Work the masa with your hands to ensure moisture is evenly distributed and there are no lumps.
- If the masa is too damp, let it dry out until manageable; if too dry, add water gradually.
- Divide the masa into balls for each tortilla and cover them with a damp cloth.
- Heat an ungreased comal or griddle over medium heat.
- Line the tortilla press with plastic bags and place a ball of dough in it.
- Press the tortilla thinly and carefully transfer it to the hot comal.
- Cook until the underside is turning opaque and speckled with brown, then flip and cook the other side.
- Continue cooking until the tortilla is fully cooked and puffs up.
- Keep cooked tortillas warm by wrapping them in a cloth.
