Instructions

  1. Work the masa with your hands to ensure moisture is evenly distributed and there are no lumps.
  2. If the masa is too damp, let it dry out until manageable; if too dry, add water gradually.
  3. Divide the masa into balls for each tortilla and cover them with a damp cloth.
  4. Heat an ungreased comal or griddle over medium heat.
  5. Line the tortilla press with plastic bags and place a ball of dough in it.
  6. Press the tortilla thinly and carefully transfer it to the hot comal.
  7. Cook until the underside is turning opaque and speckled with brown, then flip and cook the other side.
  8. Continue cooking until the tortilla is fully cooked and puffs up.
  9. Keep cooked tortillas warm by wrapping them in a cloth.
