Ingredients

The base

  • ¼ cup tahini
  • cup cocoa powder
  • 2 tablespoons hot water
  • 6 tablespoons maple syrup
  • 15 ounces low sodium chickpeas
  • ½ teaspoon instant espresso powder
  • 2 teaspoons pure vanilla extract
  • ½ teaspoon kosher salt

For serving

  • various pretzels, strawberries, sliced green apple, dried apricots, banana chips, grapes

Instructions

  1. Combine tahini and cocoa powder in a food processor, drizzle hot water over the cocoa, and puree until smooth.
  2. Add maple syrup and puree again, then scrape down the bowl.
  3. Incorporate chickpeas, espresso powder, vanilla, and salt, and puree for 3 to 4 minutes, scraping halfway through.
  4. Adjust sweetness with more maple syrup if desired, and add water if the mixture is too thick.
  5. Transfer to a serving bowl and serve with your choice of dippers.
