Ingredients

  • 1 lb. boneless, skinless chicken breasts or thighs, sliced
  • 4 pieces bell peppers, any color, sliced
  • ½ medium onion, sliced
  • ½ tsp. chili powder
  • ¼ tsp. paprika
  • ¼ tsp. garlic powder
  • ¼ tsp. cumin
  • ¼ tsp. dried oregano
  • ¼ tsp. salt
  • tsp. black pepper
  • 1 Tbsp. avocado oil

Instructions

  1. 1. Preheat the oven to 375℉ and line a large rimmed baking sheet with parchment paper.
  2. 2. On the baking sheet, mix the chicken, peppers, onions, seasoning, and avocado oil together.
  3. 3. Bake for 20-22 minutes or until the chicken is cooked through and the vegetables are tender.
  4. 4. Serve with your choice of lettuce wraps, sweet potato, cauliflower rice, or corn tortillas.
