Ingredients

The filling

  • 1 package mini phyllo shells
  • 1 oz 1/3 less fat cream cheese
  • 3 tablespoons light sour cream
  • 2 tablespoons salsa
  • 2 teaspoons taco seasoning
  • ¼ cup fat free refried beans
  • ¼ cup shredded 2% milk sharp cheddar cheese

The toppings

  • ¼ cup shredded lettuce
  • 4 pieces cherry tomatoes

Instructions

  1. Preheat the oven to 350°F and line a baking sheet with parchment paper.
  2. Spread the phyllo shells across the baking sheet.
  3. In a mixing bowl, combine cream cheese, sour cream, salsa, taco seasoning, refried beans, and cheddar cheese, mixing well.
  4. Spoon the filling into the phyllo cups evenly.
  5. Bake in the preheated oven for 10 minutes.
  6. Allow to cool for 5 minutes, then top with shredded lettuce and a quarter of a cherry tomato on each bite.
