Blueberry Chia Jam

Ingredients

  • 3 cups fresh blueberries
  • 3-4 tablespoons maple syrup
  • 2 tablespoons chia seeds
  • ½ teaspoon vanilla extract (optional)

Instructions

  1. Combine blueberries and 3 tablespoons of maple syrup in a medium saucepan over medium heat and bring to a low boil.
  2. Reduce heat slightly and simmer for about 5 minutes, stirring frequently, until all berries are dark and shiny.
  3. Mash the blueberries with a potato masher, leaving some whole for texture.
  4. Stir in chia seeds and reduce heat to low, letting it simmer for about 15 minutes until thickened.
  5. Remove from heat and stir in vanilla extract.
  6. Store in an airtight container in the fridge.
