Instructions
- Combine blueberries and 3 tablespoons of maple syrup in a medium saucepan over medium heat and bring to a low boil.
- Reduce heat slightly and simmer for about 5 minutes, stirring frequently, until all berries are dark and shiny.
- Mash the blueberries with a potato masher, leaving some whole for texture.
- Stir in chia seeds and reduce heat to low, letting it simmer for about 15 minutes until thickened.
- Remove from heat and stir in vanilla extract.
- Store in an airtight container in the fridge.
