Vegan Cocoa Pancakes

Instructions
- Mix the non-dairy milk and apple cider vinegar and let it curdle for about 5 minutes.
- In a large bowl, combine the flour, baking powder, cocoa powder, cinnamon, and salt.
- Add the curdled milk, maple syrup, melted coconut oil, and vanilla to the dry ingredients and mix until just combined.
- Heat a non-stick pan over medium-low heat and pour ¼ cup of batter for each pancake.
- Cook until bubbles form on the surface and the underside is lightly browned, then flip and cook the other side.
- Remove from the pan and keep warm while cooking the remaining pancakes.
- Serve with maple syrup, sliced bananas, berries, or other toppings.
