Vegan Cocoa Pancakes

Ingredients

  • 1 cup non-dairy milk
  • 1 teaspoon apple cider vinegar
  • 1 cup light spelt flour
  • 2 teaspoons baking powder
  • ¼ cup unsweetened cocoa powder
  • 2 tablespoons unsweetened cocoa powder
  • ½ teaspoon cinnamon
  • a tiny pinch salt
  • 3 tablespoons maple syrup
  • ¼ cup melted coconut oil
  • 1 teaspoon vanilla extract

Instructions

  1. Mix the non-dairy milk and apple cider vinegar and let it curdle for about 5 minutes.
  2. In a large bowl, combine the flour, baking powder, cocoa powder, cinnamon, and salt.
  3. Add the curdled milk, maple syrup, melted coconut oil, and vanilla to the dry ingredients and mix until just combined.
  4. Heat a non-stick pan over medium-low heat and pour ¼ cup of batter for each pancake.
  5. Cook until bubbles form on the surface and the underside is lightly browned, then flip and cook the other side.
  6. Remove from the pan and keep warm while cooking the remaining pancakes.
  7. Serve with maple syrup, sliced bananas, berries, or other toppings.
