Ingredients

The biscuits

  • cups all-purpose flour
  • 2 tablespoons baking powder
  • 1 teaspoon salt
  • ½ cup unsalted butter
  • 1 cup cold buttermilk
  • 2 teaspoons honey

Optional topping

  • 2 tablespoons melted butter
  • 1 tablespoon honey

Instructions

  1. Preheat the oven to 425°F (218°C).
  2. In a large bowl, combine flour, baking powder, and salt. Mix well.
  3. Add cubed cold butter and mix until coarse crumbs form.
  4. Create a well in the center and pour in buttermilk and honey. Fold until combined without overworking the dough.
  5. Transfer the dough to a floured surface and gently bring it together, then flatten into a rectangle.
  6. Fold the dough several times to create layers, then flatten again to about ¾ inch thick.
  7. Cut out biscuits using a biscuit cutter and arrange them close together on a baking sheet.
  8. Brush the tops with remaining buttermilk and bake for 18-20 minutes until golden brown.
  9. Optionally, brush with honey butter topping before serving.
