Instructions
- Prepare the dough by mixing warm water, yeast, and honey; let it sit until foamy.
- Add flour and olive oil, mixing until a sticky dough forms, then knead until smooth.
- Place the dough in an oiled bowl, cover, and let it rise in a warm place for about 1½ hours.
- Caramelize onions in olive oil with salt and pepper until golden brown, then set aside.
- Brown the chorizo in the same skillet, then add garlic, jalapeno, and chipotle chilies.
- Stir in spinach and artichokes until spinach wilts, then remove from heat and add basil.
- Preheat the oven to 375°F (190°C). Roll out the dough and shape it on a greased baking sheet.
- Spread pasta sauce over the dough, then layer with caramelized onions and chorizo mixture.
- Top with shredded fontina cheese and bake for 25-30 minutes until cheese is melted.
- Remove from oven and add fresh basil and shaved manchego cheese before serving.
