Buffalo Chicken Breast Skillet

Ingredients

Seasoning

  • 2 teaspoons salt-free all-purpose seasoning
  • 2 teaspoons onion powder
  • ½ teaspoon paprika
  • ¼ teaspoon salt
  • ¼ teaspoon freshly ground black pepper

Main Ingredients

  • 3 teaspoons expeller-pressed canola oil
  • 1 pound boneless skinless chicken breast, cut into bite-size pieces
  • 1 cup diced celery
  • 1 cup diced carrots or sliced baby carrots
  • 3 scallions thinly sliced, green and white parts divided
  • 1 tablespoon minced garlic
  • ½ cup marinara sauce
  • 2 tablespoons hot sauce
  • 2 tablespoons light mayonnaise
  • cup lowfat plain Greek yogurt
  • ½ cup bleu cheese crumbles or shredded sharp cheddar cheese

Instructions

  1. Combine the seasoning ingredients in a small bowl.
  2. Heat a skillet on medium heat and add 2 teaspoons of oil.
  3. Sprinkle half of the seasoning mix onto the chicken and add it to the skillet.
  4. Cook the chicken without moving until browned on one side, about 4-5 minutes, then turn and brown the other side for about 2 minutes.
  5. Transfer the chicken to a plate and keep warm, scraping the pan to release browned bits.
  6. Add 1 teaspoon of oil to the pan, then add celery and carrots, cooking gently for 3 minutes.
  7. Add the white parts of the scallions and garlic, cooking until tender, about 4 more minutes.
  8. Stir in the marinara, hot sauce, and remaining seasoning mix, bringing to a simmer.
  9. Add mayonnaise and return the chicken to the pan, cooking until hot.
  10. Turn off the heat and stir in yogurt, ¼ cup bleu cheese, and half of the green scallion parts.
  11. Top with remaining bleu cheese and scallions, then serve hot.
