thinly sliced, green and white parts divided

bleu cheese crumbles or shredded sharp cheddar cheese
Instructions
- Combine the seasoning ingredients in a small bowl.
- Heat a skillet on medium heat and add 2 teaspoons of oil.
- Sprinkle half of the seasoning mix onto the chicken and add it to the skillet.
- Cook the chicken without moving until browned on one side, about 4-5 minutes, then turn and brown the other side for about 2 minutes.
- Transfer the chicken to a plate and keep warm, scraping the pan to release browned bits.
- Add 1 teaspoon of oil to the pan, then add celery and carrots, cooking gently for 3 minutes.
- Add the white parts of the scallions and garlic, cooking until tender, about 4 more minutes.
- Stir in the marinara, hot sauce, and remaining seasoning mix, bringing to a simmer.
- Add mayonnaise and return the chicken to the pan, cooking until hot.
- Turn off the heat and stir in yogurt, ¼ cup bleu cheese, and half of the green scallion parts.
- Top with remaining bleu cheese and scallions, then serve hot.
