Pistachio Hummus

Ingredients

  • 1 15-ounce can chickpeas, reserve liquid from can
  • ½ cup shelled pistachios
  • 2 cloves garlic, peeled
  • 3 tablespoons coarsely chopped fresh parsley or cilantro
  • ¼ teaspoon salt (optional)
  • ¼ teaspoon black pepper
  • 2 tablespoons tahini
  • 2 tablespoons lemon juice
  • 1 tablespoon extra virgin olive oil (optional)

Instructions

  1. Combine chickpeas, pistachios, garlic, parsley or cilantro, salt (if using), black pepper, tahini, and lemon juice in a food processor.
  2. Process the mixture until chopped, then slowly add olive oil (if using) and reserved chickpea liquid until smooth and creamy.
  3. Serve with whole grain pita bread, fresh vegetables, or use as a dip or spread.
