Pistachio Hummus

tahini

extra virgin olive oil (optional)
Instructions
- Combine chickpeas, pistachios, garlic, parsley or cilantro, salt (if using), black pepper, tahini, and lemon juice in a food processor.
- Process the mixture until chopped, then slowly add olive oil (if using) and reserved chickpea liquid until smooth and creamy.
- Serve with whole grain pita bread, fresh vegetables, or use as a dip or spread.
