Guinness Cheese Sauce

Instructions
- Soak sliced onions in buttermilk for 10-30 minutes.
- Prepare a flour mixture with flour, salt, cayenne, and pepper.
- Heat oil to 375°F for frying the onions.
- Coat onions in flour mixture and fry until golden brown, then drain on paper towels.
- Combine whiskey, ketchup, soy sauce, honey, mustard, Worcestershire sauce, cayenne, and pepper in a saucepan and simmer until thickened.
- Form burger patties with ground beef and blue cheese cubes in the center.
- Grill patties to desired doneness, about 4-5 minutes per side.
- Make the cheese sauce by creating a roux with butter and flour, then adding Guinness and milk until thickened, and stirring in cheddar until smooth.
- Assemble burgers on toasted buns with whiskey glaze, cheese sauce, and crispy onions.
