Ingredients

Onion Marmalade

  • 1 large red onion, thinly sliced
  • 1 tablespoon extra virgin olive oil
  • 2 teaspoons brown sugar
  • ½ teaspoon kosher salt
  • 2 tablespoons balsamic vinegar

Black Bean Beef Burgers

  • 1 can black beans (15 ounces), rinsed and drained
  • 1 large egg, beaten
  • 3 tablespoons extra virgin olive oil
  • 3 tablespoons Dijon mustard
  • 2 teaspoons garlic powder
  • 1 teaspoon kosher salt
  • 1 teaspoon ground black pepper
  • 1 teaspoon Worcestershire sauce
  • 1 pound 90% lean ground beef
  • 8 ounces Gorgonzola cheese or other mild blue cheese, crumbled
  • 6 whole wheat hamburger buns, lightly toasted

Instructions

  1. Caramelize the onions in olive oil, brown sugar, and salt until golden brown, then add balsamic vinegar and set aside.
  2. Mash the black beans in a large bowl and mix in the egg, olive oil, mustard, garlic powder, salt, pepper, and Worcestershire sauce.
  3. Incorporate the ground beef gently into the mixture and shape into 6 patties.
  4. Brush both sides of the patties with mustard and cook in a skillet until golden brown, flipping once.
  5. Top the burgers with blue cheese and broil for a short time to melt the cheese.
  6. Serve the burgers on toasted buns with onion marmalade.
