Ingredients

  • 2 15-ounce cans full-fat coconut milk
  • 2 tablespoons honey
  • ΒΌ cup unsweetened cocoa powder
  • 1 tablespoon cornstarch or arrowroot powder (optional)
  • 1 teaspoon pure vanilla

Instructions

  1. Heat coconut milk and honey in a saucepan until simmering.
  2. Add cocoa powder and cornstarch, whisking until well combined and simmer for 1-2 minutes until thickened.
  3. Remove from heat and let cool for 15-30 minutes.
  4. Stir in vanilla and pour the mixture into popsicle molds.
  5. Freeze for 8 to 24 hours before removing from molds and wrapping individually.
