Ingredients

The chicken salad

  • 2 cups cooked chicken breast, cubed
  • ¼ cup mayonnaise
  • 3 tablespoons green onions, sliced
  • 1 tablespoon lemon juice
  • ½ cup blueberries
  • ¼ cup chopped walnuts
  • 1 teaspoon granulated sugar
  • ½ teaspoon salt
  • ¼ teaspoon ground black pepper

The avocados

  • 3 whole avocados, cut in half with pits removed

Instructions

  1. Mix together the cubed cooked chicken, mayonnaise, green onions, lemon juice, walnuts, and blueberries in a large bowl.
  2. Add the granulated sugar, salt, and pepper, adjusting to taste.
  3. Refrigerate the chicken salad for at least 20 minutes.
  4. To serve, cut the avocados in half and remove the pits.
  5. Scoop the chicken salad onto each avocado half and enjoy.
