Ingredients

The base

  • 2 lbs cauliflower florets
  • 4 slices center cut bacon

The creamy mixture

  • 6 oz 1/3 less fat cream cheese
  • ½ cup fat free sour cream
  • 4 oz shredded 50% reduced fat sharp cheddar cheese
  • 4 oz shredded 50% reduced fat pepper jack cheese
  • 3 pieces scallions (chopped, greens only)
  • 2 cloves garlic (minced)
  • ¼ teaspoon salt
  • 1 pinch black pepper
  • 1 pinch crushed red pepper flakes

Instructions

  1. Preheat the oven to 350°F and mist a 2 QT baking dish with cooking spray.
  2. Cook the bacon until crisp, then crumble it into bite-sized pieces.
  3. Steam the cauliflower florets until tender.
  4. In a bowl, mix the softened cream cheese and sour cream with a hand mixer, then add 3 oz each of the shredded cheddar and pepper jack, bacon, scallions, garlic, salt, pepper, and red pepper flakes.
  5. Stir in the steamed cauliflower until well coated, optionally mashing some for texture.
  6. Transfer the mixture to the baking dish and top with the remaining cheeses.
  7. Bake for 30 minutes, broiling for 1-2 minutes if needed for a golden top.
