Instructions
- Preheat the oven to 350°F and mist a 2 QT baking dish with cooking spray.
- Cook the bacon until crisp, then crumble it into bite-sized pieces.
- Steam the cauliflower florets until tender.
- In a bowl, mix the softened cream cheese and sour cream with a hand mixer, then add 3 oz each of the shredded cheddar and pepper jack, bacon, scallions, garlic, salt, pepper, and red pepper flakes.
- Stir in the steamed cauliflower until well coated, optionally mashing some for texture.
- Transfer the mixture to the baking dish and top with the remaining cheeses.
- Bake for 30 minutes, broiling for 1-2 minutes if needed for a golden top.
